I found this delicious recipe for Pizza Quinoa Bites on Iowa Girl Eats and with such easy directions, how could I not share it with all of you? I chose to make the bites in regular size muffin tins, but she suggests trying mini muffin tins. If I ever make these for an appetizer or side, I’ll try the mini version, but as my dinner, the muffin size was perfect. One of the other great things about this recipe is that you can adapt it to your own tastes and favorite pizza fillings. I chose to try black olives, but I want to try tomatoes, basil, or pineapple in the future!
2 cups cooked quinoa,  chilled (about 1/2 cup uncooked quinoa)
2 whole eggs
2 egg whites
2 cups chopped pizza toppings (I chose olives)
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 teaspoon Italian seasoning
Tomato sauce, for dipping
1. Preheat oven to 350 degrees and spray your cupcake tins with a nonstick spray.
2. Combine all ingredients, except pizza sauce, to a large bowl then stir to combine. 
3. Fill the muffin tin cups to the top and bake for 25 to 30 minutes, or until golden brown. Let it cool for a few minutes before you remove it from the tin.
These taste best dipped in warm tomato sauce, so I would definitely suggest trying that
